Single Serving Almond Coconut Pancakes

This is one of my favorite breakfasts. When I’m feeling like I want something more then just scrambled eggs for once, or on those days where I want something sweeter. I’ve found if I eat something sweet for breakfast (bowl of fruit, over the top waffles, etc), I crave junk the rest of the day. So I like to start my mornings with a savory, high protein meal. But sometimes you just need a change! Sorry the pictures SUCK. I kind of forgot that I needed to take a picture of my pancake before I started cutting it up and adding toppings. So, I present the Single Serving Almond Coconut Pancake:

This recipe is easy and delicious.

Ingredients:

1 tbs almond meal

1 tbs coconut flour

1/8 tsp baking powder

1/4 tsp stevia

1 tbs applesauce

1 tbs coconut oil (melted)

1/4 tsp vanilla extract

1 egg

optional addition of some cinnamon and nutmeg to your desire

Process:

Mix all the dry ingredients together.

Mix all the wet ingredients together.

Add the dry to the wet and mix it up all nice.

Heat up a skillet/pan (with your favorite fat or non-stick cooking spray) and dump the batter on (it makes one nice size pancake or make 2 small ones).

When bubbles appear and bottom is cooked, flip pancake and continue to cook until finished (3-5 minutes per side).

Serve it up 🙂

I like to top mine with an over easy egg or almond butter…. or both. And turkey sausage on the side. Delicious and filling.
