I know, I know, I’m a horrible blogger. Long story. Hopefully I’ll have one up to go along with this recipe soon!
I say these are “cookies” because they taste sweet but don’t have sugar in them and, well, I eat them at all hours of the day 😀
So, on to the recipe.
1 cup flaxseeds
1/2 cup almond flour
1/2 cup coconut flour
1 cup applesauce
6 tbs or 1/3 cup coconut oil
1 mashed banana
pinch of salt
splash of cinnamon and nutmeg (to your taste)
Preheat oven to 350 degrees.
Mix all dry ingredients together. Wisk eggs and add in then add all the rest of the ingredients. Spray cookie sheet with non stick spray or line with parchment paper. Take tablespoon size balls of dough and flatten onto cookie sheet. Bake for 15-20 minutes, until golden brown. Let cool. If you are in a humid or hot environment, I advise keeping these in the fridge.
As I mentioned, I eat these at all hours of the day. These cookies are fantastic. They are great because they are a sweet treat without the sugar. They are super healthy (good fats, protein, minimal carbs) and don’t promote inflammation.
