Something Different: Chocolate Coconut Bites


Okay, so clearly food photography is not my speciality.

I know I said I was going to play around with the sweet potato flour this week and get you a recipe… well, not quite :).

I did play with it a little, I made my flaxseed cookies but subbed out the almond flour for sweet potato flour. I also left out the banana. The sweet potato flour made it sweet enough I didn’t even need them! It changed up the consistency a little, which I adjusted for by adding some coconut milk (almond would work fine as well).

BUTTTTT I did make a different recipe, as the picture above shows.

Chocolate Coconut Bites:

1/2 cup melted coconut butter

1/3 cup cocoa

1/3-1/2 cup shredded coconut (I did a big 1/3 cup)

1 tbs. nut butter (I used sunflower seed butter, any would work well)

Mix all ingredients together in a bowl. If it is too runny from the melted coconut butter let it sit and harden up a bit. Form into balls/bites and keep in the fridge. These are perfect to satisfy a sweet tooth after dinner plus the chocolate craving 🙂

New Blog Obessions

Thanks to MDA’s post today, outlining 12 health and fitness blogs, I have now found some new blog obsessions!

There are three that really stood out and I am now particularly fond of:

1. The Eating Academy– wow this guys some great info. His story is very interesting and I love the way he presents and organizes his information.

2. Paleo for Women– IF YOU ARE A FEMALE YOU MUST START READING THIS BLOG IMMEDIATELY! I actually ran across her blog a few weeks back but didn’t really follow up on it besides following her on facebook. I actually explored her blog a little more today and DAMN, good stuff! Amazing articles and information for females. She discusses differences between men and women in terms of nutrition and some of the things that primal people outline (ex: fasting… it may work for men, not so much for women!). Anyway READ IT!

3. Paleo/Non-Paleo– Great blog. I want to explore it a bit more, but from what I’ve read so far, I love it. I feel like she really understands the struggle to go paleo and helps with that transition… letting you know its okay if you struggle! She has a whole page on eating autoimmune plaeo which I’m excited to look into more. I think that will be a good diet to follow with Lyme. I shall be sure to make a post about it once I’ve researched it more and maybe given it a shot 😉


Sweet Potato Flour

Hello Hello!

A little update, shall we?

So 4th of July was fun… well the first half. I ran horsetooth with my best friend and roommate! IT was such a blast. We thought it was going to be harder and that we would only make it 1 or 2 miles. We ran over 5!



Tough stuff, but such a blast.

We played some volleyball in the afternoon but I was beat from the run! We ate delicious pulled pork that we had made in the crockpot along with a ton of watermelon and carrots!

Let’s move on to the good stuff…


Look what I found at Whole Foods this morning!!! I almost peed myself, I was so excited! (Possibly a slight exaggeration… possibly not). Although, I can’t lie, the price almost deterred me from buying it. Key word: almost. I couldn’t resist.


I came running home needing to try it ASAP! Problem? I was starving and didn’t have the patience to look up recipes and experiment. I was hoping to make some crepes, but again, starving. So I resorted to my pancake recipe, but subbed out the almond flour for the sweet potato flour. Yummy! It was delicious, I loved the flavor.

Since the Lyme bugs have been angry the past week or so, I’m needing some extra rest. I’m planning on taking it easy this next week- few to no workouts, relaxing between work and school. Just taking it easy. What does this mean? MORE BAKING TIME! HECK YES! I can’t wait to experiment with the sweet potato flour some more. 🙂

Let’s Get Personalll….

Okay, no not really that personal! I just haven’t really done a personal post in a while, now have I?

Lots of recipes for you, though- be happy about that 🙂

So, lets discuss this past weekend.

I did my first crossfit workout on Friday evening. I’m officially addicted. It was awesome. Fun. Not boring. Killer. WOOHOO!

I felt like absolute crap heading into the workout. I was EXHAUSTED. I had a headache. I just wasn’t feeling it. I thought “there is NO WAY I am going to make it through this workout.” We did the warm-up and I was breathing! Started the workout? I was golden! I felt awesome after- that’s what a good workout does to ya. It cures everything.

Saturday, well I worked in the morning then I headed down to Denver to catch a Rockies game. They suck. The fireworks after? They rocked.



We got to sit on the field, too, because we had rockpile seats! I had a picture but now my computer isn’t letting me upload it…

I drove home and my roommate decided I was going to go out with her:). It was so much fun though, I saw a bunch of friends I hadn’t seen in a couple weeks. We hit up a sandwich place at 2 am, which tasted delicious then crashed at our place for the evening

Then Sunday night my roommate and I went to see Magic Mike. The movie itself sucked, but Channing Tatum is worth the money! Glad we went 😉

All in all that was my weekend.

I taught my first spin class this morning, it went very well! I’m excited to start teaching more of them.

Avocado Chocolate mini Muffins


These are freaking DELICIOUS!

Avocado Chocolate mini muffins (or cookies… I added too much liquid and they wouldn’t sit on a tray ooops)

1 egg

1 ripe avocado

1/4 cup coconut oil

1 cup almond flour

1/4 cup stevia (agave would work REALLY well with these guys- I don’t like my stuff super sweet so add more sweetener as desired)

1 tsp baking soda

1 tsp baking powder

1/4-1/3 cup cocoa

nutmeg and cinnamon (I just throw it in to my liking!)

1/4 tsp salt

1/2 cup dark chocolate chips or cut up super fancy delicious dark chocolate (was out :/)- optional

1/4 cup almond milk or water or coconut milk (use as needed… may not need it may need more, depending on if you want thick cookie consistency or a runnier batter)

Whisk it up in a bowl. Throw it on a cookie sheet or mini muffin tin and bake at 375 for 10-12 minutes! I’m at altitude so you may need to adjust degrees or time? To the second batch I threw in the oven I put one cashew on top- for variety and fun! 🙂
