Something Different: Chocolate Coconut Bites

Okay, so clearly food photography is not my speciality.

I know I said I was going to play around with the sweet potato flour this week and get you a recipe… well, not quite :).

I did play with it a little, I made my flaxseed cookies but subbed out the almond flour for sweet potato flour. I also left out the banana. The sweet potato flour made it sweet enough I didn’t even need them! It changed up the consistency a little, which I adjusted for by adding some coconut milk (almond would work fine as well).

BUTTTTT I did make a different recipe, as the picture above shows.

Chocolate Coconut Bites:

1/2 cup melted coconut butter

1/3 cup cocoa

1/3-1/2 cup shredded coconut (I did a big 1/3 cup)

1 tbs. nut butter (I used sunflower seed butter, any would work well)

Mix all ingredients together in a bowl. If it is too runny from the melted coconut butter let it sit and harden up a bit. Form into balls/bites and keep in the fridge. These are perfect to satisfy a sweet tooth after dinner plus the chocolate craving 🙂
