Sugar Free Sweet Potato Brownies

Oh man another recipe- two days in a row! You should be so excited. These brownies are paleo, obviously. They are made from sweet potato and are delicious. Anti-inflammatory for Lyme disease!

They are based of off this recipe from paleomg.com but with some tweaks, of course ;). I made them completely sugar free because, well, that’s what I like to do.

Ingredients:

1 sweet potato

3 eggs

1/4 cup melted coconut oil

1/3 cup applesauce

4 oz bar of dark chocolate (I use 100% so there is no sugar, if you like them a little sweeter or not that crazy intense dark chocolate flavor I’d advice using a 75-85% bar)- 2 oz melted and 2 oz. chopped up.

3 tbs. coconut flour

1/4 cup cocoa

1/2 tsp baking powder

1.5 tbs. vanilla powder (you could probably get away with using vanilla extract instead)

1 tbs. cinnamon

1/2 tbs. nutmeg

pinch of salt

Preheat oven to 425. Poke holes in the sweet potato with a fork and bake until done (~30 minutes).

Once it is cooked and cooled slightly to handle, peel it and mash it up (not the peel!). Be sure to mash it up really well, you could use a mixer to get it really smooth (I don’t have one…. I know! That’s what ya get for being a poor college student). OH! Be sure to turn your oven down to 350.

Add all your wet ingredients to the potato, including the 2 oz of melted chocolate.

Mix dry ingredients in a bowl and add to the wet. Mix well. Then add the 2 oz. of chopped up chocolate. Mix in.

My square/rectangular baking dish was in use (aka the dishwasher was eating it… I’m lazy and don’t like to hand wash things) so I used a round cake pan. You can use either what I did or a glass baking dish (8x8ish I suppose:) ). Spray it with some olive oil or butter or whatever nonstick you like to use, pour in your batter, and bake for ~30 minutes. Be sure to let them sit until completely cooled (or even overnight) before cutting into them. This lets the flavor spread through the brownies and enhances the flavor and delicious taste for when you do eat them!

Smarty Pants

Aren’t I a smarty pants? I downloaded the wordpress app for my phone then just uploaded the pics from my phone onto my blog! YAY FOR USING MY COLLEGE BRAIN!

So here we goooooo…. Portobello Mushroom Pizza Deliciousness.

Yes, the “deliciousness” was necessary. All pictures will be at the end because of the confusing technological issues I am having.

Ingredients:

3 portobello mushrooms

1 small onion chopped

About half a bunch of asparagus cut up

olive oil

Tomato sauce

Cheese (optional)

Garlic cloves (depending on how much you like garlic…. 1-3)

Spices of choosing- salt pepper and basil for sure

Preheat oven to 400 degrees.

Take stems out of mushrooms and place on baking sheet to bake for about 5 minutes.

While mushrooms are baking for a minute, sauté asparagus in some olive oil. About halfway through cooking asparagus add the onion and garlic. Add salt and pepper to taste. Add some basil.

I used italian pork sausage from Whole Foods. Cook in a skillet over stove, as well. I cooked it about halfway then took it off and chopped it into slices so it could sit on the pizza. Put it back on the burner to finish cooking through.

Spoon tomato sauce into the mushroom caps (however much you like 🙂 ) then add the veggies and top with the sausage. Pour a little more tomato sauce on top plus salt and pepper and basil. Any other spices you like, add em! If using cheese, sprinkle some cheese on top. I don’t do dairy so I opted out of it, you could also sprinkle nutritional yeast on top for a lactose free cheesy option!

Place back in oven for about 15-20 minutes or until mushrooms are soft and seem cooked through. Let cool and enjoy! It is easy enough to double this recipe and make more. This lasted me about 1.5 meals. Mostly out of deliciousness:)

It is also easy enough to use whatever veggies you like or meat choice. Very versatile yet delicious.

I hate portobello mushrooms but this was AWESOME! It didn’t taste gross and mushroom-y so if you are not a mushroom fan, have no fear and give this a shot! Just add lots of spices to really up the flavor and you won’t notice the mushroom at all!

About To Tear Someones Head Off

AHHHH! ALL I WANT IS IPHOTO ON MY COMPUTER SO I CAN DOWNLOAD MY PICTURES!!! I HAVE THREE, YES THREE, RECIPES FOR YOU! I’m going insane.

Now I have to buy it and I’m a broke college student. My blog may be down until christmas when I can ask for it. Or unless I randomly get a GIANT paycheck from work. Although I tend to spend all of that on ingredients for my recipes…

anywho, I promise someday in the next year I’ll have some new recipes for ya 😉

photo failure

Again, apologizing for the MIA-ness I’ve been participating in.

There is a lot I want to update you on and a recipe or two BUT as you know my computer crashed the other week. This means I got a new hard drive which apparently doesn’t include ilife… aka I can’t upload any pictures from my phone to my computer (yes I take all my pictures with my phone… don’t judge me). 

I don’t want to just write things, that’s boring. Nobody wants to read paragraphs of BLAH about my life. You want to see all the pictures, I know ;). But true story, I can’t upload pictures and thus don’t want to make boring posts with no pictures. So you will all have to wait until christmas when I will be asking for ilife ;). JUST KIDDING! …hopefully. I’m on a mission to find a friend with it so I can upload it. Hang tight, fingers crossed it won’t be too much longer!

Coconut muffins revamped

I just wanted to let you all know I remade the coconut muffins I posted before and tweaked them. I think they are much better! I’ve changed the recipe so be sure to revisit that post and check ’em out now!

 

Sorry for not posting again. My computer crashed and I had to replace the hard drive :(. So I was without a computer for a week and then spent the past 2 days loading everything back onto it.

Coconut Muffins

Yay! A new recipe, finally. I’m on day 3 of the 21 Day No Sugar Detox! So I made some coconut muffins to snack on, courtesy of the book by Balanced Bites. I switched it up a bit, of course :). I also doubled this recipe so you get 12 instead of just 6 muffins

Coconut Muffins:

6 eggs

1/2 cup almond milk, coconut milk, or water

1/2 cup coconut oil

1/2 cup  coconut flour

4 tbs. sweet potato flour, if you don’t have this using more coconut flour will work fine

1/2 tsp baking powder

1 tbs. Cinnamon (add more if like)

~1/2 tbs. Nutmeg (Add more if like)

1 heaping tbs. vanilla powder- this is vanilla extract in powder form. It tastes like powdered sugar but is amazing! 🙂

Pinch of salt

Preheat oven to 375.

Whisk eggs then add the rest of the wet ingredients. Mix in the dry ingredients.

Grease muffin tins and fill 1/2 way. Bake for 15-20 minutes. Makes 12.

If not sugar detoxing, I’d advise using 1/4-1/2 cup applesauce instead of the extra egg whites or milk to add some more sweetness. These are not sweet… I drizzled coconut butter on top and really enjoyed them!

21 days

So I’m still not moved in to my new place yet (TOMORROW!), I’m crashing at my best friends place this week. Thus, no new recipe yet. I promise lots are coming! Let’s just do a recap of my week, shall we? An update for you all on my life, because I know you care SO much! 🙂

 

Last Friday we moved everything out of our apt and into my friends new house. Sunday we cleaned the WHOLE apt and officially moved out! Craziness indeed. Then Monday my best friend and now ex-roommate (so sad) headed down to Denver to go to Elitch Gardens (an amusement park) with a bunch of other friends

(My best friend/ex-roomie and I… I have lots more pictures but don’t have their approval to post pictures and I wouldn’t want to without asking them even though I know they wouldn’t mind).

That picture was after we went on a water ride and got completely soaked. We went on almost every roller coaster twice and were there until about an hour before the park closed. Such a blast! I love roller coasters:).

Tuesday was busy with work- taught spin and boot camp. I don’t remember the rest of the day.

Wednesday night I went to the Kaskade concert at Red Rocks. I had bought one of my good friends tickets for his birthday and was lucky enough he decided to drag me along. I went to Red Rocks to see Pretty Lights last year and it was such an amazing venue I was so excited to go back. Maybe the two of us will make this an annual thing… I mean we’ve been two years in a row now in August 🙂

Thursday Adan (my friend) and I went tubing down the river in town, which was relaxing and fun. The water was really cold and super dirty from the run-off but still worth it:). We ran into some other tubers and tubed with them for a bit. 

Last night my roommate (okay my bff whose house I’m crashing at this week) and I decided to be real college students and take advantage of summer…. We hit up the grocery store, each bought a pint of Ben&Jerry’s and proceeded to devour each one on our own as we walked home. Needless to say my stomach hates me. But it was delicious 😀

 

Now onto the title of my post…. I had to get my ice cream in because I’m doing the 21 Day Sugar Detox! Yes, I know I tried earlier this summer and failed… I’m doing it for reals this time. I bought the book by Balanced Bites and I’m ready to go. I’m starting Sunday and have enlisted 3 other friends to do it with me! I’m basically doing a combo of Whole 30/21 Day Sugar Detox. I’m nervous and excited and more nervous. Ahhh. Should be good, hopefully I can make it through this time. Actually, no hopefully. I AM GONNA MAKE IT THROUGH THIS TIME! 

Anyway, that is my boring and long update for now. New apt I’m coming for you tomorrow! And new recipes are coming for you guys soon- especially with this detox, being done with summer class, and not working as much (transitioned into the school schedule so my number of classes is down this month) I’ll have lots of time to play and bake/cook.
