Banana Coconut Chocolate Chip Cookies

Something dangerous happened recently. Very dangerous. My Whole Foods starting carrying Enjoy Life chocolate chips. They are free of the 9 most common allergens including dairy, soy, and gluten. You used to have to order them on line and I was to lazy to do that. Now I can walk into the grocery store and get them. This is bad. very. very. bad. I bought a bag last weekend… almost gone. Pretty much what I’ve been living on all week… chocolate and sunflower seed butter……. and these cookies.

So, these babies are almost completely sugar free except for the chocolate chips. Use 100% dark chocolate if you want to make them completely sugar free. But, they taste amazing, like normal delicious cookies!

Ingredients:

1/2 cup coconut flour

1 tsp baking soda

2 eggs

2 very ripe bananas

pinch of salt

1/3 cup chocolate chips

4 tbs. coconut oil

Preheat oven to 350 F.

Mix all ingredients in a bowl. Line a cookie sheet with parchment paper or spray with non stick spray. Take tablespoon size balls of dough and place on cookie sheet, flatten (not super thin… maybe 1/4 inch? Whatever looks like a reasonable cookie size) with back of spoon.

Bake in oven for about 20 minutes.

Yields: Not enough. I’m doubling this recipe next time!
