Nut-Free Paleo Coconut (Chocolate Chip) Pancake for One

Mmm-mm pancakes! Here is, another, easy one-person pancake recipe.

Ingredients:

2 eggs

1.5 tbs coconut flour

1/2 tbs coconut oil

1/2 tsp baking powder

sprinkle of cinnamon

pinch of salt

Chocolate chips or blueberries or other fruit (I advise adding one of these… if not the chocolate chips, definitely add some fruit! It just enhances this pancake)

Mix/beat the eggs then add the rest of the ingredients. Pancake it up on a griddle or in a pan. I like to make one huge pancake 🙂 but you can make a few smaller ones. Pour the batter on a preheated pan (that is non-stick or contains your choice of fat to keep the pancakes from sticking). Cook on each side on medium to medium high heat for about 3 minutes until golden brown and perfect.

If I make it with chocolate chips it tastes delicious topped with sliced banana (and some almond or sunflower seed butter would be lovely, too).
