Lemons 'n Lyme

When life gives you lemons, use them to beat Lyme

Single-Serving Lemon Coconut Flaxseed Pancakes

Let’s just get right to the recipe.

Follow my recipe for single-serving banana coconut flaxseed pancakes

But add-

1/2-1 tbs. unsweetened shredded coconut

scant 1 tbs. of lemon juice

To make them like lemon-poppyseed, add 1/2 tbs. of chia or poppy seeds

Be sure to serve topped with some coconut oil, almond or sunflower seed butter, and fresh or frozen berries. These extras really make the pancakes!

Easy peasy. Enjoy 🙂

Well that was easy. Have a wonderful weekend!

So, my name is Victoria. I was recently diagnosed with chronic/long-term Lyme Disease. It has been one of the biggest reliefs of my life. I finally have an answer for all the pain I've been in for years. I'm 20. I love to bake and cook. I created this blog to 1) chronicle my recovery 2) share my recipes. My recipes are geared to those with Lyme in terms of nutrition and anti-inflammatory, etc. My research has shown that eating a paleo/gluten-free/low-carb diet is best for those with Lyme, and although I try to stick with this I fail horribly at times. Follow along and feel free to contact me! :)

  1. Oh my goodness, that looks delicious!

  2. The banana coconut flaxseed pancakes are great. Nice to see you use the meal or you crush the flax seed. Adding the fruit is very tasty. I had already planned Raspberry & Mascarpone Cheese Pancakes for sunday Breakfast. I haven’t blogged about it, but here is a link to the recipe: https://www.dropbox.com/s/1mi9cvf9jdwc2w5/Raspberry%20and%20Mascarpone%20Cheese%20Pancakes.docx . If you like it, maybe you can find a way to make it paleo.

Thanks for sharing this food creation of yours Victoria. Glad to see you are in an upbeat right now. 🙂

    • I happen to have some mascarpone cheese on hand since I used it to bake a cheesecake for my boyfriend. I’ll have to make him these pancakes! They sound delicious.
I’m trying to stay positive even when I’m not feeling great. But, it is almost summer so there is a lot to look forward to!
