Single-Serving Lemon Coconut Flaxseed Pancakes



Let’s just get right to the recipe.


Follow my recipe for single-serving banana coconut flaxseed pancakes

But add-

1/2-1 tbs. unsweetened shredded coconut

scant 1 tbs. of lemon juice

To make them like lemon-poppyseed, add 1/2 tbs. of chia or poppy seeds

Be sure to serve topped with some coconut oil, almond or sunflower seed butter, and fresh or frozen berries. These extras really make the pancakes! 

Easy peasy. Enjoy 🙂

  1. The banana coconut flaxseed pancakes are great. Nice to see you use the meal or you crush the flax seed. Adding the fruit is very tasty. I had already planned Raspberry & Mascarpone Cheese Pancakes for sunday Breakfast.     1. I happen to have some mascarpone cheese on hand since I used it to bake a cheesecake for my boyfriend. I’ll have to make him these pancakes! They sound delicious.
      I’m trying to stay positive even when I’m not feeling great. But, it is almost summer so there is a lot to look forward to!
