Vacay and LLMD

I’m back after about a two week vacation. I headed home to visit the fam, see my LLMD, and have some friends visit. Being home was a blast, I got to go to the beach and spend time with 3 of my best friends who came to visit! I also saw my LLMD…

I’m going to be starting IV antibiotics which probably means less recipe sharing because I won’t have the energy or drive like I usually do to make new recipes for you guys. You’ll have to bear with me through the next couple months.

That’s all I’m really going to share about that. I’m hoping to have a new recipe for you guys soon, if I find any free time with all this stupid GRE studying!

Chocolate Avocado Muffins

This recipe is based off of my old recipe for chocolate avocado mini muffins, I made a few tweaks to use coconut flour instead of almond flour. I’m also not a huge stevia fan (I don’t like the aftertaste! plus it makes my stomach hurt) so I used honey instead.

Avocado is AMAZING, it is so versatile and always tastes fantastic in chocolate dishes. It adds that creaminess factor (as well as some healthy fats) and you can’t even taste it! These are some of my favorite chocolate muffins.

Ingredients:

1/4 cup coconut flour

1/3 cup cocoa powder

1 tsp. baking soda

1 tsp. baking powder

1/4 tsp. salt

1 tsp. cinnamon

1 ripe avocado

3 eggs (room temp)

1/4 cup honey

scant 1/4 cup applesauce (room temp)

1/4 cup coconut milk (or almond milk) (room temp)

1/4 cup melted coconut oil

Directions:

Preheat oven to 375 F.Β 

Sift coconut flour and cocoa powder into a bowl. Add remaining dry ingredients and mix together. Add all your wet ingredients, except the coconut oil, and mix everything together thoroughly. Add in the coconut oil and mix to combine.Β 

Pour batter into greased muffin tin. Bake for about 18-20 minutes, until toothpick inserted in middle comes out clean.

These freeze well and can be warmed in the microwave for 30 seconds.

Well, I kinda missed my blogs 1-year anniversery… oops! It was during finals week and things were crazy! I apologize for being MIA but after school ended I pretty much slept and did nothing for a week. Then… things continued to go down hill Lyme wise. I haven’t been feeling great and I’ve had NO energy. If you follow me on instagramΒ or on facebookΒ you’ll know I’ve been doing things but through gritted teeth and then coming home to sleep for a day straight after. Having dealt with weird symptoms and pain for yearrrrrssss I’ve just learned to push through. This is both good and bad because I’ve gotten good at hiding how terrible I actually feel but it also means I am bad at resting and taking it easy. I just don’t like to miss out and it is hard to say no, I do it often enough.

Anyway, I could do a whole 1-year blog anniversary post, which I had originally planned, but I’m not going to make it as big as I had thought. Blogging has been awesome and I’m really glad I started the blog, I’ve met lots of amazing people, blah blah blah. You guys all know how that goes, right?

When I started this blog my game plan and goal wasn’t to make it explode and be “blog famous” and make lots of money (of course that idea was rolling around in the back of my head and I wouldn’t object). I’m not super internet savvy. I’m not exactly the master at knowing how to explode my blog, but I’m satisfied with how much it has grown. I like just having a place to post my recipes and voice my ideas, plus complain a little ;). I just want to thank all of you, my readers, for the support!

I’ve got a couple fun posts coming up and I’m hoping to be feeling better soon so I can get back in the kitchen and get you guys some more recipes! But here is what I want to know- what do YOU guys WANT to see on my blog? What type of posts or recipes or ideas do you want me to post about?!
