I’m not into life sharing lately but I do have a recipe for you! Paleo Zucchini bread- yuummmm!
My friend had a garden this summer and grew me some giant zucchinnis! I was craving some zucchini bread the other week so I made this happen.
Sorry for the lack of recipes lately, I’ve been exhausted. I barely have the energy to cook let alone clean up after the disaster I tend to make in the kitchen. I’ve been trying to avoid making cleaning disasters for the sake of my roommate ;).
3/4 cup coconut flour, sifted
1 tsp. baking soda
1 tsp. vanilla
2 cups grated zucchini
1/2 cup applesauce
1/4 cup honey
Preheat oven to 350 F.
You should have peeled and then grated your zucchini so that you have about 2 cups. Then take the zucchini and squeeze out the excess liquid. Do this using your hands. Lay out some paper towels and place the zucchini on the paper towels. Squeeze the zucchini in the paper towels (may need a few layers) to really get all that liquid out!
Combine all the wet ingredients. Add in your dry and ingredients and blend together. Line your loaf pan with parchment paper or nonstick spray/butter of choice. Pour your batter into the loaf pan and bake for 40-45 minutes until golden brown on top and a toothpick comes out clean.
Let cool completely before cutting into slices and devouring.
