Summertime calls for grilling! So here is an easy grilled steak salad recipe. We make a simple kale and green bean salad that is accompanied by some lightly marinated steak. This is the perfect summer evening meal that is nourishing, but not too heavy in the hot weather.
Kale and Green Bean Marinated Steak Salad
Serves 4
Ingredients:
Salad
-1 bunch of green kale, de-stemmed and washed
-1 lbs. of green beans
-Olive oil
-Salt
Dressing
-1 tbs. olive oil
-4 tbs. fresh squeezed orange juice
-2 tsp. balsamic vinegar
-Salt
Steak and Marinade
-1-1.5 lbs. Sirloin or Flank steak
-1 tsp. olive oil
-2 tsp. lime juice
-4 tbs. fresh squeezed orange juice
-1/4 tsp salt
-1/4 cup chopped cilantro
First, combine all marinade ingredients in a bowl then pour over the steak in a bowl or bag and let sit in the fridge for minimum of an hour- the longer the better (I did this first thing in the morning to cook the steak at night).
Preheat oven to 425F. Toss your green beans with some olive oil and salt. Roast for about 30 minutes (ovens differ so check earlier as needed), flipping halfway through until green beans are soft and cooked through.
While the green beans are cooking, roughly chop your kale. Sprinkle the kale with a few shakes of salt and then massage it until it is dark green and glossy (this takes a couple minutes, so be patient). Set aside.
Mix all your dressing ingredients together in a small bowl and set aside.
Now for the steak, preheat your grill. I use the Ninja Foodi Indoor Grill on medium heat. Cook your steak for 7-15 minutes, depending on how done you like it, flipping halfway through.
Once everything is cooked, toss your green beans, kale, and dressing together. Top with sliced steak and enjoy! I like to serve this with some roasted potatoes on the side.
