Valentine’s Day Thumbprint Cookies (Gluten-free, Paleo, Diary-free, Nut-free)

Want an easy, yummy treat to make for Valentine’s Day? Try these thumbprint cookies! Of course, these can be made any time of year, but if you make the thumbprint into the shape of a heart, then they are perfect for the holiday.

These cookies are paleo and dairy free. They also contain no nuts and are super easy to make. You can whip a batch up quickly. The sweet jam compliments the shortbread cookie perfectly. Feel free to use your favorite jam, Nutella, or even a homemade jam by mashing berries with some honey. Using a red jam will give the heart shape a better impression :).

Valentine’s Day Thumbprint Cookies

Makes about 16 cookies

Ingredients:

-1 cup Tigernut flour (almond flour should work too)

-2/3 cup tapioca starch

-1/3 cup cassava flour

-1/2 tsp. baking powder

-Pinch of salt

-1/4 cup maple syrup

-1/4 cup olive oil

-1 egg 

-1 tsp. vanilla extract

-1 tsp. apple cider vinegar

-Raspberry jam (or whatever you like!)

Preheat the oven to 350 F.

Whisk the dry ingredients together in a small bowl.

Blend the all wet ingredients, except for the jam, together in a larger bowl.

Add your dry ingredients to the wet and mix well to combine.

Scoop tablespoonful amounts of dough onto a parchment lined baking sheet. Use your thumb or first finger to gently press a heart shaped indent into the dough (See my video on Instagram for a tutorial).

Fill each cookie crater with jam or Nutella. 

Bake for 12-14 minutes until just beginning to golden.

Let cool for 10 minutes on cookie sheet before moving to wire rack to finish cooling.
